Raita is a condiment dish made with yogurt and it is done in many varieties. Here, I am presenting before you 3 types of raita which will keep you cool even in summer season.


Brinjal raita

Ingredients
Brinjal - 1/2 kg
Chilli powder - 3/4 tsp
Turmeric powder - 1/2 tsp
Salt - As needed
Oil - As needed
Curd - 2 cups
Sugar - 1/2 tsp
Cumin seeds - 1 tsp
Garlic finely chopped - 2 tsp


Method of preparation
1. Slice brinjal into thin round pieces. Marinate with turmeric powder, half tea spoon chilli powder and a little salt. Place it for at least half an hour. Deep fry in hot oil.
2. Mix curd with sugar and a little salt.
3. Heat a pan. Add 1tsp of oil. When oil heats, add cumin seeds and garlic and fry well. When it is done, add 1/4 tsp chilli powder and stir well. Put the flame off.
4. Take a serving bowl and spread brinjal pieces on it. Pour curd on it. Spread the fried items on the top and mix it slightly with a fork.


Pomegranate raita

Ingredients:
Pomegranate - 1 small sized
Curd - 1.5 cups
Coriander leaves finely chopped - A hand full
Salt and pepper powder - As needed
Fried cumin seeds powder - 3/4 tsp
Chilli powder - 1/4 tsp


Method of preparation:
1. Take pomegranate seeds one by one out of the shell. Keep aside, a tea spoon full to be added later.
2. Take pomegranate seeds in a bowl and add curd and coriander leaves to it.
3. Add salt and pepper as needed.
4. Add cumin seeds and chilli powder to it and mix the contents well.
5. Decorate your raita with the pomegranate seeds, that you have kept aside before.


Cucumber-Mint raita

Ingredients:
Salad cucumber grated - 1 cup
Mint leaves grinded - A big spoon
Curd - 2 cups
Salt and pepper powder - As needed
Fried cumin seeds powder - 3/4 tsp
Chilli powder - 1/4 tsp


Method of preparation:
1. Remove water from the grated cucumber and keep aside.
2. Add salt, pepper and mint paste to the curd and mix well.
3. Add cumin powder and salad cucumber and mix again.
4. Decorate it with chilli powder by spreading it on the top.
